Gluten, Dairy and Egg Free Cookies


  • 100 g dairy free margarine softened
  • 100 g Coconut sugar or light brown sugar
  • 150 g  gluten-free plain flour
  • 1/4 tsp Baking powder
  • 85 g Dark chocolate chips (or a suitable dairy free chocolate)



  1. Pre-heat over to 180 degrees/160 fan/gas 4

  2. Cream the dairy free margarine and sugar together until pale and fluffy.

  3. Add flour and baking powder and bring together until you have a dough

  4. Add your choice of filling to the dough

  5. Divide the mixture into 7 balls (or smaller if you want smaller cookies)

  6. Place the balls of dough well apart on greased baking trays and flatten a bit with the palm of your hand.

  7. Chill in the fridge for at least 30 minutes. This prevents them from spreading so much

  8. Bake for approx. 20 - 25 mins until pale golden at the edges.

  9. Cool in the trays. If you eat them while still warm they will fall apart.
